Couldn't find coriander seeds at any of the 5 grocery stores I went to so instead we used crushed fennel seeds. I was wanting to use chicken breast instead of thigh but my husband convinced me not to or it could be too dry and he was absolutely right. The thighs were moist and had a good char to them. As for the tzatziki I didn't measure any of the ingredients I just bought a 16 oz tub of 0% fat greek yogurt and stirred in the rest based on what I wanted and it was AMAZING. Also used garlic paste for a stronger flavor and the evoo was just to thin it out a bit. We like our tzatziki thick but if you like it more like sauce add more evoo.
