Doubled the recipe, made 15 medium and 15 small cookies. Two separate batches. Had to bake them a few minutes longer as they were still gooey at 12 minutes. Everyone enjoyed them. Was definitely better the next day. The photo shows how the medium cookies came out where I wasn’t generous on the powdered sugar and just coated them. The only thing I didn’t use was the purple food coloring. My McCormick Ube flavoring was already purple, which is what I used for the ube extract.
If vacuum sealing these, it may be best to use the containers with the seal valve, as opposed to vacuum sealing a bag of cookies, especially not the day of, they get hard. 😔
