Add cooking chorizo inside, pre-cooked lightly for meat eaters
Used 2 medium onions
Could use 5/6 cups corn
2 cups of Colby Jack + handful of sharp cheddar on top
Cover in the enchilada sauce so it’s moist
I added a small red pepper
Turn up heat a bit at the end to make it hotter
Add parsley on top once it’s baked
