I like that this recipe incorporates bananas and uses oats instead of wheat flour but don't like how flat and condensed the resulting loaf is. Next time I'll use a narrower pan to get a taller loaf. I also doubled the zucchini and added 1/2 cup brown sugar. I had to bake it much longer because of the extra liquid and even then it turned out too moist for my liking. Taste is great, just don't like the texture. Next time I'll add an extra cup of oats to hopefully compensate for the excess liquid.
