I knew the spices seemed lacking in the recipe so I tried to adjust a bit. I seasoned the onions with salt at the beginning and added twice the garlic called for. After simmering I tasted and it was still bland so I added a touch more salt and pepper before stirring in the cheese. Somehow it still tastes like almost nothing? I don't love it and now have a huge pot of chili mac I'm not sure will get eaten unfortunately.
