Hi Mary, I've not made this recipe myself yet, but I don't see why it couldn't? Perhaps for a packed lunch it might be easier to eat if made with a different pasta shape, rather than spaghetti - maybe something more bite-sized like fusilli or farfalle? I thought it looked like a nice, simple recipe that could be adapted - swap different veg, etc... If you do make it, let us know how you get on! :)
