This turned out well! I used sirloin tip from a steer I raised. Because it was pasture raised, I knew it was going to be a bit tougher than normal. I marinaded the sirloin tip in balsamic vinaigrette, olive oil, thyme, oregano, salt, pepper, and garlic powder for a few hours. It turned out very tasty and added to the Italian style dish. I would recommend adding some shallots or thinly sliced onions for more flavor.
