Despite the fact that most recipes list a set number of servings, I find they aren't necessarily consistent in terms of what a serving size is. I can only tell you how I determine the correct number of servings for me and mine. Since I have spent my life battling weight, I base my concept of serving size for an entree based on the amount of protein in it.
This recipe shows 311% of an individual's daily protein recommendation. Normally I start out testing at four servings, since that seems most common, but with so much protein, I tried six. At six servings it provides almost 52% of daily protein, which fits into my target of 25~55% for meat-based entrees. But when I have to guesstimate, i do ensure a large salad, just in case.
I should mention that, although i think this recipe is very healthy, the health score is inflated because they list no quantifies for the tortillas or cheese, both of which would increase the negative side of the equation.
