I finally made this. And it was great. I didn't use 2 tortillas , I used one and folded it in half. Because that's how you make quesadillas. At least that's how they do it in restaurants. Nobody makes a sandwich out of 2 tortillas! I put the cheese on first so it would melt. I used got salsa (which wasn't hot), so i added a spoonful of my extra hot homemade King Taco salsa. And cilantro. It needed avocado, but I was too hungry to wait and chop one up. I ended up eating the leftovers just in a bowl with some Mexican rice. Just microwaved the two together and topped with cheese and sour cream. I was out of tortillas.

You actually can make a quesadilla with two tortillas, and cut it into pie shapes

I made quesadillas with two tortillas the other day and, yes, it can be done, but it's a pain in the butt. Much easier to use one tortilla and foldit.
