Really nice. As always with these types of curries I recommend to marinade the chicken in some of the spices beforehand and then stir fry the chicken for a few minutes and take it out of the pan and add it later when everything is 5 min away from done. This way you don’t overcook the chicken while you’re waiting for the veggies to soften. And the chicken will be more flavourful.
Next day I added some lime and some lemongrass to the leftovers and that really elevated the dish
