As others have noted that 1-Tbsp of salt is excessive. I reduced it by 1/3 and it was still to much.
Next time I’ll definitely keep it at 1/2-Tbsp.
I added 1-Tbsp of Italian herbs for some added flavor. I’ll definitely try this process next time with a sourdough loaf.
