This was well received by Hubs and our guests. I added a small onion, mushrooms and a small red pepper, and a couple of tablespoons of chipotle paste, which gave it that smoky flavour. I like the idea of a dump and leave meal, but it really didn’t take all that long to chop the onion, pepper and mushrooms. Without the extra this would be ready in under 30 minutes. We’ll definitely be making this one again. It doesn’t call for it but, unless you’re on a salt reduced diet, add a little salt and pepper to taste.
