I used Wholemeal self-raising flour and left out the bic. Soda. I also didn’t add the salt. Reduced the sugar by just 10% to 45g. Wanted to reduce the butter but just went with 73g. I gather it will need the butter for crumbliness, crispness and flavour. May try 70g next time.
I got 12 biscuits out of my dough. No issues with rolling. Next time I will roll a little more evenly as, because I was hurrying, I had some biscuits thinner than others. However, they both tasted delicious.
Not something to make too often but I hadn’t eaten a biscuit in months and these were very moreish.
