(Sorry, no pictures... I was in a food fog after eating and completely forgot!) I have made this before in a crockpot and it has always been a hit in this house. Now that I have a pressure cooker I decided to give this a go. My husband was concerned that it wouldn't come out right seeing as this recipe didn't call for a whole stick of butter... Boy, was he wrong.
The meat was so tender that it fell apart with little effort on my end. And that flavor?! OMG it was so delicious that we could not stop eating it! Even when we were about to pop, we just could not put it down! There was enough left over for us to each have about 3 more servings (we put the roast over mashed potatoes, which is Devine) and the flavor got even better as it marinated over the next couple days.
This is now being requested at least once a week in my house. If meat prices were lower, it would for sure be added to the weekly rotation!
