I made this curry last night- took a long time, but the results were amazing!
I didn’t use the cashew nuts/onion paste as eldest daughter is allergic to nuts. So, I followed all steps up to step 13, but where it asks you to add the nut/onion paste— I replaced that with coconut milk and chopped tomatoes and some hot water, with chopped coriander leaves . Then left it to slowly bind on simmer for 15min. Then added the prawns. Most essential ingredients that brought the whole thing together was the amchur powder ( mango powder) WOW! This makes it pop!!!!
I know you’re not supposed to simmer further but I did- for 15 minutes. Man’o man… YUM is all I can say.
Sit this on some fresh basmati rice, can accompany with natural yogurt on the side…. Enjoy!
