I shredded a store bought rotisserie chicken. Used about 1/4 of it.
I didn't have salsa, so I mixed medley tomato, red onion, cilantro & Thai pepper with a little olive oil (made 2 cups) on a frying pan until fragrant then added the chicken & sprinkled shredded cheese over it.
I used 1 large seedless Cucumber to use up the mayo based dressing along with extra cayenne pepper & granulated garlic.
I used a Greek pita bread instead of a tortilla.
I used baby watercress instead of spinach.
