OK, honestly, nothing stellar about this recipe. It's fine.. But it's easy, a slow cooker recipe, and a kid pleaser, so it'll be in our rotation, though probably not heavily.
I've made it twice, and the time the chicken was shredded (per comments: overdone), I liked it better. The whole breasts were dry and the shredding masked that, I think.
Also, I didn't have diced tomatoes with Italian herbs, so I just added about a teaspoon (eyeballed it) of Italian seasoning. Served it with a salad.
