Doesn’t look impressive but wow is this good. And easy! My package of chicken was huge (2.7 lbs) so I adjusted the servings to 8 to accommodate for that. Added 2 (12oz) bags of frozen mixed veggies instead of fresh broccoli and sprinkled my homemade house seasoning liberally but otherwise followed directions. I microwaved the veggies (they were in steamable bags) and added them right before the rice but you probably wouldn’t need to microwave them ahead of time. You could do 1.5 times the seasonings (except the salt, add that as needed after the cheese) because white rice tends to make it more bland but I’ll be making this often.
