I made the same day focaccia bread with Kalamata olives. Didn’t turn out as airy as yours but I’ll keep trying. I think I’ll weigh my flour next time because I looked up the equivalence for 500g of flour and it said 4 cups. I also looked up 420ml of water and it said 1.75 cups. Hopefully, it’ll turn out like yours next time, but it was still delicious!!

yeah for bread you need to get a food scale!! you can get one for a reasonable price on amazon. using cup and spoon measurements aren’t as reliable as weighing out the ingredients. hope it turns out well!
