let me just say, as a first-time bread maker, this was such a simple and easy-to-follow recipe that really demystified bread baking for me. i saw a video of the garlic + cheese version yesterday and it looked so delicious i made the dough later that same day.
if you’re making this, do not worry at all if your dough is reallyyy wet; the gluten will still develop as normal and WILL form those big air bubbles while in the fridge as long as your yeast is good! my dough was super sizzly from all the air pockets that formed during proofing. the only thing wrong with the wetter dough is that it won’t dimple as well as it does in the video. this was not a problem for me at all as i still got some dimpling. also, this bread tasted so absolutely delicious that i ended up not even caring about it. easily the best bread i’ve ever had in my life so far. i had three 3” x 3” pieces with my main meal as i and everyone else couldn’t get enough of it!! this will be the only recipe i use whenever i make focaccia again in the future and i’m excited to try different toppings!! best impulse decision i’ve ever made lol 🤣
