First of all I did it for 8 servings for left overs. I also did a lb of turkey and a lb of chicken. I would make sure you heat up the cauliflower rice in the microwave and then drain all the water first before adding to the mixture. I would like to say this is absolutely amazing. I added cilantro Salsa and lime juice and ate as it. My family isn't doing weight loss so they used the mixture as taco filling and added their toppings. This will be a weekly if not bi weekly recipe now.
