This was just OK, but since everyone ate it (and some tried to go back for seconds), I will make it again with some modifications. I think adding some diced green chiles or cut up peppers, corn, etc... would give this a little more oomph. I used our favorite medium Aldi salsa, which worked well. I did NOT use the vegetable oil in the pan since ground beef has so much fat to begin with. You can totally skip that to save some calories. I also drained my beef before adding the rest of the ingredients (I used 85%). 3/4 of us were fine with the tortilla chips. I was not. They were too soggy but parts were still crunchy. It's an either/or for me. I've made something similar in the past using flour tortillas, so may try this again using that in place of the chips.
