I would make something similar and do it very differently. Definitely not in the same skillet. Beef grease changed the texture of the gnocchi. Maybe making the beef mixture as a separate sauce to spoon over boiled gnocchi, but cooking the gnocchi in the skillet with the rest of it didn't work for me. The leftovers were even worse. At the very least, make sure the grease has been drained extra well from onions and beef. I drained it but even the little bit left ruined the gnocchi for me.
