I cannot begin to list how many times I’ve made this over the years! The best dosa-like vegan omelette recipe out there! Perfect for when you don’t have tofu at hand as one of the few recipes that don’t have it. Keeps amazingly for meal prep and pairs with so many different veggies and ingredients. For example: shredded zucchini, spring onions, shiitake mushrooms and green pepper. Or alternatively: fresh tomatoes, vegan cheese, onion, peppers and vegan bacon / ham! Super grateful for this recipe and the proportions are perfect I have never had these fall apart or be un-flippable. I would say use the minimum amount of batter to make it easier to flip and not too thick (unless of course you want to add more baking powder / soda and do a Spanish omelette). Also pre heat the pan but keep it on low-mid fire since it needs time to cook through. If the recipe creator ever sees this: thank you, I’m a fan!
