Used 1.5lbs of boneless skinless chicken thighs. Used 1/3 (accidentally dark) soy sauce, 1/3 rice vinegar, and probably 1 & 1/3 cup water. Added about 1/3 small pineapple and a whole bell pepper. My liquid measurements made this very saucy which I like. Next time I’ll add more veggies and more pineapple. The chicken barely requires shredding, it basically fell apart when I tried to pick it up. This was delicious and easy.
