There are other butternut squash mac and cheese recipes out there, but I was interested in this one because it was pretty healthy, especially if you serve it with whole wheat or lentil pastas. It doesn't compensate for the squash with loads of cream cheese or heavy cream like some other ones do. If I want unhealthy, I'll just make my normal mac and cheese!
And, it was pretty good! I was pleasantly surprised by the cheese sauce. I will say, it's a great jumping off point, but it is just slightly bland, so in the future, I'm going to add spices/experiment with cheeses. The consistency was great.
Things I think might help add flavor: roasting the squash instead of boiling, at least adding some onion and garlic powder, and using two cheeses. Obviously that will add time and ingredients, but it would probably be worth it and still stay quick.
It's not a replacement for your regular mac and cheese, but if you're eating healthier and want an alternative, this is a good one.
