This is a good basic recipe for Beef Lombardi.
I added 1 tsp each dry oregano leaves and dry thyme leaves and 1 bay leaf to the sauce. Wider egg noodles work better than the thin ones. It's best if three cheeses are used, parmesan, cheddar and mozzarella but you can always switch it up with what you have on hand. I like to add at least ¼ cup of parmesan to the sour cream and noodle mixture with a generous amount of black pepper. Sour cream in the mixture is good but again, use what you have, ricotta, cream cheese, cottage cheese or even plain yogurt. Use a Tbl of cornstarch to keep it from separating.
Try layers, thin layer of sauce on bottom, noodles, light sprinkle or cheeses, sauce, noodles, sauce and the remaining cheese. Place a sheet of parchment paper on top before the foil and you won't lose any cheesy goodness when you uncover it.
