This doesn't make two servings. It makes two 8x8 baking pans. The website lists each pan as having 4 servings, which also seems incorrect. I also never saw where the last teaspoon of olive oil came in.
The tomato ratio was high for our family. I thought there was too much spinach, but my (adult) kids didn't agree. (It was all I could taste.) I also thought the end result was pretty bland, so I'd probably season the chicken while cooking. Also, overseason the pasta water.
I probably used 1 1/2 cups fontina IN the pasta mixture and topped with an additional 3/4 cup of cheese. I just used the entire wedge. Fontina doesn't sprinkle well, which affected the topping. As a soft cheese, it clumps together once shredded. Maybe I could freeze it briefly before shredding the cheese topping next time?
