I must admit that I did a cheap knock-off version of this as I was making a quadruple batch and did not have £20 to spend on cheese. However upon tasting, I would definitely make this again and go the whole hog for a potluck or special occasion. Delicious!!
I used cheddar, and much less of it (sacrilege I know). It still tasted delicious with just the one cheese layer on top.
The salt feels like a lot when you're making the sauce, but the potatoes absorb it and the final taste was really balanced and indulgent.
There was no evaporated milk in the shop, so used whole milk instead. Worked out fine! The starch in the potatoes thickens it nicely. I bet evaporated milk would have taken it to the next level though.
