5/18 How can food I didn't grow up with be so comforting? Start early with all the prep. I used pork instead of chicken, and a ziploc bag to coat the meat with spice. Cut meat smaller next time for E. I used 2 carrots, 4 medium potatoes, 1 cucumber, store brand crunchy peanut butter. I skipped both peppers and the brown sugar. The larger 90°-side skillet was perfect. The burner was on for an hour, but that includes browning the meat, onions, etc. It didn't need to simmer for an hour. DH, T, and I loved, A and E liked. 6/18 update: I accidently added all the spice to the meat instead of keeping some back for later. Same additions and subtractions as above but added more PB and subbed 1 can coconut milk for chicken broth. No discernable difference, oh so good!
