Burnt some of the eggplant slices while roasting but think it has more to do with my uneven oven and crappy baking sheet vs instructions. Delicious even without a few eggplant slices, pretty easy overall and the tomato sauce was nice and sweet, might become my go to for easy pizza nights in the future.
