Quick and simple recipe. The texture is completely soft, more like a muffin than a cookie, and with the way these puffed in the oven I imagine they would make perfect little muffin bites. I added extra pumpkin spice + cinnamon and 2 tbsp dark brown sugar to the batter, and topped with a simple powdered sugar and heavy cream icing. The flavor is light, but not bland. I used a tablespoon to portion them out and ended up with 38 of them, perfect to bring to a party or gathering!
