This oden recipe is very thorough and detailed. I know that can be a bit intimidating but all of the steps were really easy to follow. I originally thought the broth was too bland before putting in the daikon and fish cake but after adding and simmering, the flavor was perfect after. The daikon absorbed the salt and it was so balanced and light.
Although it is a bit time consuming for the whole thing but it was well worth it in the end because the oden broth was SOOOOO delicious and tasted just like good oden from Japan!
I would definitely recommend this if you're missing Oden from Japan. It makes enough for 3 - 4 and the best part is that the leftovers will taste even better as the daikon and fish cake become more flavorful.
