I’ve made this recipe several times. It’s definitely earned its place as my go to scone recipe. Tip 1: Put the butter in the freezer 15 min before you’re going to start (or when you turn the oven on). It will break up easier into the flour this way - or you can grade it in. Tip 2: Keep the eggs and sour cream in the fridge until just before you’re ready to incorporate. In short, I’d like the dough to stay as cold as possible until I pop it in that 400° oven.
