SO GOOD! I omitted the balsamic, and subbed Worcestershire sauce. Wasn’t getting a great sear going (maybe let the pot heat up well first?) but it was amazing anyway.
Used the whole can of tomato paste, the whole carton of broth (4 cups), and made a little cornstarch slurry to stir in at the end to thicken a bit. Also used rainbow carrots, which I think adds a bit of flavor.
