This recipe FAR exceeded my expectations! Absolutely delicious and easy to make. I used Roma tomatoes. I would say this makes enough for about 3 - 4 people. Next time I’ll double the tomatoes so I can have leftovers. This is going into my dinner rotation for sure. 👍🏻
