Super yummy, one of our fave go-to meals! I used canned pineapple bc I'm lazy and it's still good, I just give the pineapple a rinse in a strainer to get rid of some of the sweetness.
I buy some pre packaged slaw mix that has purple and green cabbage, lettuce , shredded carrots, green onions and will put the curry over that when I'm not feeling white rice :)
