Changes: I used a whole stick of cream cheese and half the sugar for the frosting, for the cake so opted for room temp butter instead of olive oil and did 5 carrots, one grated thick and the other grated thin. Excellent consistency. I only had 1 9-in spring form, so I baked all together a bit longer and then sliced in half.
It was a hit!
