First time seeing Lacey’s IG page, and I read through a lot of the recipes, particularly for focaccia. I’m an experienced sourdough bread baker and I’ve seen a lot of recipe formats, and this Samsung one seems great. But I do like seeing the basic recipes right in the IG comments. I modified the same day focaccia for 50% whole wheat. I don’t like plain white, but didn’t want to start out with all WW either. I split the difference on the hydration (so 85%). I also cut the recipe in half, as there’s just two of us, and I like it fresh. So I used 125G Bobs Red Mill Bread Flour, 125G Bobs Red Mill While Wheat Flour, and 212G warm water, and cut the other ingredients in half. Came out well - first rise went a little too long so I cut second rise back to an hour. Thanks Lacey - you do beautiful work.
