I add less oil, just enough to coat everything evenly.
1. Preheat 400F
2. Place potatoes in a single layer in a 13x9 inch baking dish. Pour oil over them. Add garlic, dried oregano, salt and pepper to taste. Toss well with oil.
3. Bake potatoes for 15m. Add stock, toss and bake for 10 more. Add lemon juice, toss and bake for 10-15m more or until potatoes are cooked through. If you want, broil under preheated broiler for 2-3m until golden brown.
4. Sprinkle with fresh oregano and serve at once.
