Cook steel cut oats first: Bring water to a boil then add salt & oats. Lower heat & let the oats simmer for 15-20 minutes or until desired texture is reached.
Keep in mind that as they cool they will thicken.
Add the pumpkin purée, spice, vanilla, & maple syrup. Mix well, portion and enjoy. Add more syrup if you desire more sweetness. And top with candied pecans if desired.
