Love using barley in place of rice. The texture with the mushrooms is always so satisfying, and barley has an excellent nutritional profile. I'd be tempted to add a dash of malt vinegar with the cream or cashew cream to capture the acidity of the traditional sour cream, but I think I'd like it either way.
