Wow! We thoroughly enjoyed this dish. I only made half the recipe but made some changes. I used a chipotle salsa, did not add the chilies, and used regular cheddar instead of a texmex blend. I also cooked the whole thing over a bed of cooked multigrain rice mix (also baked in the same casserole dish before adding the salsa mix and chicken). If you like a little heat, you will not be disappointed.
