I've made these at least three times (although not the overnight version) and they never disappoint. Perfect texture. Love that it uses 200g of sourdough starter so I've never any reason to discard my precious starter! Add some cinnamon, nutmeg and pinch of clove for a nice spiced waffle perfect with maple syrup.
