I did not want to turn on the oven, so I chopped & sautéed all the vegetables in a large pan.
I added more 2-3x seasonings, as well as powdered bay leaf, coriander, powdered jalapeño.
I added heavy cream after the boiling mix cooled.
I did not puree the mix. Too lazy to get immersion blender out. Left soup chunky.
The soup came out very flavorful with a nice spicy kick.
This can be prepped ahead of time. Chop all veggies and add spices to a gallon zip lock bag, leave in fridge till ready to cook. When ready, add to a pot & saute vegetables. Add liquid, boil, add parmesen, cool slightly, then add heavy cream.
