I made these vegan with flax eggs, cashew yogurt, and maple syrup. They're just kind of mushy. And when she said they'd deflate while cooling, she wasn't kidding. They went concave, not just flat, which is not at all appealing. I have enough muffin recipes that just work that I don't need to revisit these, though if I do I'd I'd definitely add cinnamon and I think I'd hold some oats back to stir in whole for texture.
