Very tasty tomato soup! I used 200ml of coconut based creamer, roma tomatoes, a bit extra ginger, a bit of sugar to offset the tomato acidity, and basil. Drizzled with garlic olive oil. All herbs (except roasted garlic and ginger) added and mixed in once the soup was simmering, right after turning off the heat. Served with buttery garlic bread. Solid recipe and is definitely a keeper!
