Made this for an office baking competition—third place!
Modifications:
-Substituted 1-to-1 gluten free baking flour
-Added whipped maple syrup spread to the frosting; reduced the powdered sugar to 2 cups to compensate for the added sweetness
-Topped with homemade cranberry orange jam—yum!
For next time:
-The maple spread was a GREAT addition, but made the frosting thinner. A touch of cornstarch during the creaming process should help.
