We did this overnight to have on Christmas morning. We added chopped bell peppers and mushroom, and increased the green onions. Worked well with Violife dairy free cheese, though be careful not to add too much. Used my instant pot on slow cook so it would be deeper, as my regular crock is a big oval. I think this contributed to a better less-rubbery texture to the eggs vs some other crockpot breakfasts I've had. Overall good and would make again.
