Made this carrot cake for my tias new years birthday party and turned it into a 6 layer cake with 0 modifications. It was a hit! Multiple people said it was the best carrot cake they had ever had. I'm starting to see a clear trend: Sallys recipes never let me down. That being said, if I were to make it for my own birthday, I'd add less sugar to the actual cake next time. Frosting was perfect.
